Ingredients

  • 1 chicken breast
  • 1 tbsp strained yogurt
  • 1 tbsp mayonnaise
  • 1 tsp Seres Foods Green Jalapeno Hot Sauce
  • 3–4 arugula leaves
  • 1 red pepper
  • 1 small red onion
  • Half an avocado
  • Salt, black pepper
  • 2 slices whole wheat bread

Preparation

Lightly toast the two slices of whole wheat bread. Boil and shred 1 chicken breast. Dice the red onion, red pepper, and avocado into small cubes for the sandwich filling. Mix 1 tbsp strained yogurt and 1 tbsp mayonnaise with fresh lemon juice and Seres Foods Green Jalapeno Hot Sauce until smooth. Add this sauce to the chicken and other ingredients and mix well. Season with salt and black pepper. Place the prepared mixture along with 3–4 arugula leaves between the two slices of whole wheat bread.
