Pesto Mozzarella Caprese

Ingredients
- 50 g fresh basil
- 60 ml natural extra virgin olive oil
- a pinch of salt
- 60 g grated parmesan cheese
- 40 g pine nuts
- 2 slices whole wheat toast bread
- 2–3 sliced cluster tomatoes
- 3 mozzarella balls
- Seres Foods Chili Olive Oil
- Fresh basil leaves for garnish
Preparation
Blend the basil, extra virgin olive oil, salt, cheese, and pine nuts until you reach a sauce consistency. Your pesto sauce is ready.
Cut the toast bread into circles matching the diameter of the mozzarella slices. Place tomato slices on top. Add a large basil leaf and then a slice of mozzarella. Using a teaspoon, place a hazelnut-sized portion of pesto sauce on top. Serve with Seres Foods Chili Olive Oil.
