Shrimp Orzo

The freshness of tomatoes and the aroma of shrimp come together with orzo to create a well-balanced dish that works both as a starter or a main course.
Ingredients
- 7–8 shallots
- 2 cloves garlic (crushed)
- 500 g cherry tomatoes
- 250–300 g peeled medium shrimp
- 1 small tea glass orzo (risoni)
- Fresh thyme
- Lemon zest
- Olive oil
- Salt, black pepper
- (Optional) Seres Chili Olive Oil
- (Optional) Parsley
Preparation
Slice the shallots into rings and sauté with the garlic in olive oil.
Add the peeled shrimp to the pan and cook until they turn pink.
In a separate pan, cook the cherry tomatoes with olive oil, fresh thyme, salt, and black pepper until softened. If desired, lightly crush the tomatoes. (Jarred tomatoes may also be used.)
Add the cooked tomato sauce to the shrimp.
Stir in 1 small tea glass of orzo and mix well.
Add a pinch of lemon zest and cook until the orzo is tender. Serve topped with extra lemon zest and fresh thyme or parsley.
