A light, oven-baked crispy coating gives spinach roots an unexpected and enjoyable snack-like texture.

Ingredients

  • 500 g spinach roots
  • 1 egg
  • 3 tablespoons flour
  • 1 teaspoon baking powder
  • 1 teaspoon dried thyme
  • ½ teaspoon cumin
  • ½ teaspoon red pepper flakes
  • Salt, black pepper
  • 1 small tea glass sparkling water
  • Breadcrumbs
  • Olive oil
  • (For serving) Seres Sweet Chilli Mayo

Preparation

Wash the spinach roots thoroughly, drain well, and pat dry.

In a deep bowl, whisk together the egg, flour, baking powder, thyme, cumin, red pepper flakes, salt, black pepper, and sparkling water until smooth.

Coat the spinach roots first in the batter, then in breadcrumbs.
Arrange on a baking tray and lightly drizzle with olive oil.

Bake in a preheated 180°C (356°F) oven until golden and crispy.
